Wear Assistant is an open-source alternative to Google's assistant on Wear OS.
English, French and Spanish support.
Install
To install Wear-Assistant download the .apk files from the relase tab (or from here and here) and install them on your phone
Then install u/malbry's Wear Installer on both your phone and watch:

Proceed to install the wear component from the "Wear Assistant" app.
Finally, launch both apps on your phone and accept all permissions.

Tips
By installing Button Launcher on your watch and replacing the "Long press middle button" action with Wear Assistant, you can basically replace Google's Assistant with this one (even on the screen at the left of the home page)

How it works
Since I am not a developper, I decided to use Tasker to automate a big part of what this assistant does. You can see the Tasker profile in the Wear_Assistant.tasker.xml. That's why there a two apps: one is to communicate with the watch, the other is to make all the more "complex" tasks. While that is slightly inconvenient for the end user, it is easier for developpers to implement more features: the "communication" app only contains a few receiving intents and only one sending intent. So it might be easy to download the tasker project and add a new feature without really coding.
